Chicken Tortilla Soup is a flavorful, Hispanic inspired soup. It is a great meal to dump in the Crockpot for busy days.


  1. Four frozen chicken breasts
  2. Six potatoes peeled and cubed
  3. Two cans petite diced tomatoes with green chilies (blended)
  4. One can chicken broth
  5. One onion cut in half
  6. Two teaspoons minced garlic
  7. One teaspoon ground cumin
  8. Salt and pepper to taste

Optional Toppings:

  1. Shredded cheese
  2. Sour cream
  3. Tortilla strips

Directions: Place all items in crockpot. Cook on low three to four hours. Take out chicken breasts, shred chicken, and place the chicken back into the crockpot. When potatoes are soft, soup is ready.
